Carrot Cupcakes

Like carrot cakes, but smaller. From Everyday Food.

1 c sugar

1/3 c vegetable oil

2 tbsp orange juice

1/2 tsp vanilla extract

2 large eggs

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp allspice

1/2 tsp salt

3/4 c plus 2 tbsp flour

1 1/2 c shredded carrots

1/2 c chopped walnuts

Preheat oven to 350 degrees. In a bowl, combine sugar, oil, OJ, vanilla, and eggs. Stir in baking powder, baking soda, allspice, and salt. Add flour and mix. Stir in carrots and walnuts.

Oil a standard muffin tin and distribute batter evenly. Bake until toothpick inserted in center comes out clean, about 25 minutes. Let cool before frosting

Cream Cheese Icing

8 oz cream cheese

3/4 c confectioners’ sugar

1/4 tsp vanilla extract

Combine in bowl and whisk until smooth.
