Kim’s Quick Marinara

I don’t actually measure anything in this, so the amounts are definitely approximate. This has spoiled me for jarred marinara, and it definitely doesn’t take much longer than opening a jar. Some people like to add sugar to cut the acid, but I don’t find this recipe to be very acidic. If you like a smoother sauce, you can either substitute pureed tomatoes for the diced tomatoes, or toss the sauce in a blender before serving.

1 tbsp olive oil

1/2 large onion, minced

2-3 garlic cloves, minced

1 28 oz can stewed or pureed tomatoes

1 14 oz can diced tomatoes

pinch oregano

Heat olive oil in pan until shimmering but not smoking. Add onion and saute until softened, 2-3 minutes. Add garlic and saute an additional minute. Add tomatoes and spices and bring to just before a boil. Turn heat down to simmer and cook additional 10 minutes or so.
