Roasted Garlic Potato Soup

2 1/4 lbs red potatoes, quartered

3 bacon slices

1 tsp minced roasted garlic

1 tbsp flour

3 c milk

1/2 c chicken broth

1/3 c shredded cheddar

6 tsp sliced green onion

Add potatoes to large pot of water. Bring to a boil and cook 15 minutes, then drain.

Cook bacon in Dutch oven until crisp. Remove bacon and reserve 1 tsp drippings. Add garlic, saute 30 seconds. Stir in flour, and whisk constantly for 1 minute. Add potatoes to pan. Mash partially with potato masher. Stir in milk and broth, and bring to a boil. Cook 2 minutes more, or until mixture is thoroughly heated, stirring frequently.

Ladle soup into bowls. Top with cheese and green onions. Sprinkle with crumbled bacon.
