Rachael’s Buffalo Chicken Chili with Blue Cheese-Corn Mug Toppers

1 tbsp olive oil

2 tbsp unsalted butter

2 lbs ground chicken

2 garlic cloves, chopped

2 celery ribs, finely chopped

1 medium onion, finely chopped

1 carrot, finely chopped

1 jalapeno, seeded and finely chopped

1 1/2 tsp ground cumin

1 tsp ground coriander

6 oz beer

1/4 c cayenne pepper hot sauce

1 15-oz can tomato sauce

1 8.5 oz Jiffy-brand corn muffin mix

1/3 c milk

1 large egg

2 scallions finely chopped

3/4 c crumbled blue cheese

Heat a medium Dutch oven or large skillet over high heat. Add olive oil and butter and melt together. Add chicken and cook, breaking up, for 6 minutes. Add garlic, celery, onion, carrot, and jalapeno. Add cumin, coriander, salt and pepper and cook for 5 minutes. Add the beer and scrape up browned bits from pan. Reduce mixture over medium heat for 2 to 3 minutes. Stir in hot sauce and tomato sauce. Reduce heat to low and simmer for 15 minutes.

Prepare corn muffin according to package directions for corn pancakes, using milk and egg. Stir scallions and blue cheese into batter. Heat a griddle pan over medium heat. Rub with butter. Drop rounded tablespoons of batter into pan. Cook until bubbles form at edges, then flip them and cook until golden all over about 2 minutes per side. Should make about 20 pancakes. Serve 2 with each mug of chili. Serve extra with hot sauce at table.

    I am lazy too and this was really good! I added extra jalapenos and used half a bottle of Ragu because I didn’t have tomato sauce and it was stil excellent. I also used Cheddar cheese in the toppers instead of blue cheese because my husband no likey the blue cheese.

    My sister made this for a group of us. She had it completed in less than an hour. It was a big hit. She put the cheese on tostitos instead of making the pancakes. I guess she is really lazy.
