Two-Potato Mash

2 lbs sweet potatoes

1 c fat-free sour cream

1/4 c packed brown suger

1/4 c butter

1 tsp kosher salt

1/4 tsp cinnamon

1 (22 oz) bag frozen mashed potatoes

2 1/4 c fat-free milk

1/2 tsp black pepper

Pierce sweet potatoes with a fork; arrange in a circle on paper towels in microwave. Microwave on high 12 minutes or until tender, rearranging after 6 minutes. Let stand for 5 minutes. Peel and mash. Add 1/2 c sour cream, sugar, 2 tbsp butter, 1/2 tsp salt, and cinnamon, stirring until blended. Keep warm.

Heat mashed potatoes in a large microwave-safe bowl according to package directions, omitting salt and fat. Add milk, remaining 1/2 c sour cream, remaining 2 tbsp butter, remaining 1/2 tsp salt, and pepper, stirring to combine. Sppon sweet potato mixture over mashed potatoes, swirling with a spoon. Do not blend in completely.
