Great way to prepare steaks when it’s too cold out to grill
4 tbsp unsalted butter, softened
2 tbsp minced fresh parsley
2 tsp minced fresh thyme
1 garlic clove, minced
4 boneless rib-eye steaks, 1 to 1.5 inches thick
1/4 c Worcestershire sauce
Salt and pepper
2 tsp dark brown sugar
1. Adjust oven rack to upper position and heat oven to broil. Combine butter, parsley, thume, and garlic in bowl.
2. Marinate steaks in Worcestershire sauce for 10 minutes. Pat steaks dry with paper towels and season with salt and pepper.
3. Line bottom of broiler pan with foil and fit with slotted broiler pan top. Arrange steaks on pan and broil until beginning to brown, about 2 minutes. Flip steaks, sprinkle with sugar, and continue to broil until well browned and cooked to desired doneness, about 5 minutes for rare, up to 12 minutes for well done. Transfer to platter. Top steaks with herb butter, tent with foil, and rest 10 minutes before serving.
