Cold Soba Noodle Salad

Coarse salt and ground pepper

8 oz soba noodles

1/2 c fresh cilantro leaves

2 tbsp rice vinegar

2 tbsp soy sauce

sesame seeds, toasted if desired

1. Bring a large pot of salted water to a boil. Cook noodles until al dente, according to package instructions. Drain, rinse under cold water, and drain well again.

2. In a large bowl, combine noodles, cilantro, vinegar, and soy sauce. Season with salt and pepper; toss to combine. Serve sprinkled with sesame seeds.

    We have something like this at a place near 30 Rock in NYC. It’s REALLY good. They also put in tofu or chicken and a little bit of shredded seaweed (which is fresh and mild and tasty not old and ocean-y).
